Spinach rice


Ingredients :

1. Spinach - 1 bunch

2. Onions - 1

3. Cumin seeds - 1 tsp

4. Bay leaf - 1

5. Cinnamon stick - 1 inch

6. Ginger garlic paste - 1 tsp

7. Green chilies - 2

8. Chopped carrots - 1/2 cup

9. Green peas - 1/4 cup

10. Rice - 1 cup

11. Garam masala powder - 1 tsp

12. Red chilly powder - 1 tsp

13. Salt - 1 tsp or to taste.

14. Curd -3 tbsp

Preparation Method :-

1. Wash the rice and keep aside.

2. Wash and Boil spinach in 2 cups of water. Drain water and keep aside. Put boiled spinach in blender and make puree.

3.Put a pressure cooker on gas, once its hot add oil.

4. Once oil is hot, add Bay leaf, cinnamon stick, cumin seeds, green chilies.

5. Add sliced onions and fry till golden brown.

6. Add ginger garlic paste and fry for 2 mins.

7. Add chopped carrots and green peas. Fry for 3 minutes.

8. Add spinach puree. and fry for 3 minutes.

9. Add garam masala powder, red chilly powder and salt. Fry for 2 minutes.

10. Add 2 cups water which was used to boil spinach. Add half cup water more.

11. Once water is boiled, check salt and add washed rice. Mix it once , add curd and cover with lid.

12 . Give it 3-5 whistles. Serve it hot.
