Pumpkin soup


Ingredients :-

1. Red pumpkin - half

2. Carrot - 1

3. Onion - 1

4. Salt to taste

5. Garlic - 2 cloves

6. Oregano or mixed herbs - 1 tsp

7. Pepper powder - 1 tsp

8. Cream - 2-3 tbsp

Preparation Method :-

1. Peal pumpkin , carrot and chop into medium pieces.

2. Boil them together in cooker and give 3 whistles.

3. Take another pan, add oil to it.

4. Add chopped garlic, chopped onion and fry for 3 minutes.

5. Once pumpkin and carrot cools down, take them into blender.

6. Add fried onion and garlic.

7. Add cream, oregano and pepper powder, salt and blend it.

8. Add stock in which pumpkin was boiled.Blend it once again.

Consistency of soup should be thick but if you want it little dilute add water.

9. Garnish with oregano and cream. Serve hot.
