Rabdi


Ingredients :-

1. Milk - 1 liter

2. Sugar - 3-4 tbsp

4. Cardamom powder (Optional)

5. Almonds and pistachios for garnishing

Preparation method :-

1. Take a non stick deep bottomed vessel.

2. Add milk to it and let it come to boil on medium flame.

3. Once it comes to boil, let it boil it more on low flame and keep stirring regularly.

4. Once the milk come to less than half of its original quantity add sugar and keep stirring. Add 3 tbsp of sugar 1st. Milk will stick to sides of the pan.. do not scrape it now.

5. In a separate bowl, take 1 tbsp corn flour and mix it with 4 tbsp of cold milk.

6. Add this corn flour and milk mixture to the boiling milk to get a thick texture.

7. Let it boil till it comes to 1/4 quantity and thickens more. Now you can add cardamom powder ans scrape the sides of the vessel and add to the rabdi.

8. Taste it and if you need more sugar, can add 1 more tbsp.

9. Garnish with chopped almonds and pistachios and serve chilled.
