Spinach leaves chat


Ingredients:

1. Spinach leaves - 10

2. Gram flour (Besan) - 2 tbsp

3. Salt to taste

4. Chilly powder - 1 tsp

5. Cumin powder - 1 tsp

6. Chat masala - 2 tsp

7. Sev mixture for garnishing

8. Onions - 1 small

9. Boiled potato - 1 small

10. Tamarind chutney for garnishing

11. Ketchup

12.Curd - 2 tbsp

Preparation Method :-

1. Wash the spinach leaves and pat them dry with tissue paper. There should be little stem left on the leaves to hold it.

2. Take a bowl, add besan, a pinch of salt, chilly powder, chat masala and cumin powder. mix them well.

3. Add little water and make it into a batter. Just right consistency to coat the spinach leaves.

4. Taste the batter for salt, if less can add more.

5. Heat the oil in a vessel to deep fry spinach leaves.

6. Now dip the spinach leaves into the batter and coat them well with batter one by one and deep fry in the oil 3-4 at a time if vessel is small.

7. Once leaves turn brown, take them out on tissue paper.

8. Place the leaves on the plate.

9. In a small bowl, take boiled potato and mash it a little bit. Sprinkle salt and chilly powder on it.

10. Put little mashed potato on each leaf.

11. Add little curd, chopped onions, sev mixture, tomato ketchup, tamarind chutney on it. Spinkle chat masala and serve immediately.

For tamarind chutney - Soak tamarind in 1 cup water to make puree. Make sure its thick puree and not tamarind juice.

Add 1 tbsp chat masala to it and boil it. Once its boiled add sugar and mix it well. Boil for 2 more minutes till sugar is dissolved.Let it cool down.

For green chutney:- Take small bunch of coriander leaves into blender. Add 10 mint leaves. Add 2 tbsp curd, 1 tsp cumin seeds, 1 tsp cumin powder and 2 tbsp water. Blend it well. Can add half onion for thicker texture.
