Pineapple halwa
Ingredients :
1. Semolina (Suji) - 1 cup
2. Sugar - 1 cup
3. Ghee - 1cup
4. Chopped pinapple (Medium to small pieces) - 1 cup
5. Milk - 2 cups
6. Nuts (Optional)
Method :
1. Take semolina in a pan and fry in on slow flame for 5-8 minutes till it gets slight brown.
2. Remove it in a plate .
3. In the same pan, add 2 tbsp ghee and add chopped pineapple. Fry it on slow to medium flame for 5 minutes.
4. In a low bottomed pan, add milk and let it boil.
5. In the slow flame, add roasted semolina to it little by little to avoid any lumps. Mix it well.
6. Add sugar to it and keep stirring.
7. Add 1/2 cup ghee and fried pineapple pieces to it after 3 minutes. Squeeze 1-2 pineapple pieces in boiling milk for pineapple essence.
8. Take ghee in pan, add chopped almonds , cashews and raising. Fry them for a minute and add in the semolina vessel.
9.Mix it well and cover it with a lid. Let it cook for 5 minutes , stir it in between.
10.Mix it for 2 minutes and check if its cooked.
11. Remove from flame and add remaining 1/2 cup ghee. Add little yellow color or kesar strands for color. Mix well and serve hot.
