Papdi chat


Preparation time: 1 hour

Ingredients:

1. For papdi :- Maida (All purpose flour) - 1 cup

2. Salt - a pinch

3. Oil - 1 tbsp

4. Water as required to knead dough

5. Ketchup

6. For tamarind chutney - Tamarind puree - 1 cup

7. Chat masala - 1 tbsp

8. Sugar - 1 tbsp

9. Green chutney (Optional)

Preparation method:

1. For papdi, take a bowl and add 1 cup maida to it.

2. Add a pinch of salt.

3. Add 1 tbsp oil to it.

4. Add little water and knead it to make a soft dough. Cover it and keep it aside for 15 mins.

5. Now take little part of dough, make a small ball out of it and roll it like a roti.

6. Roll it 1 cm thick. Now take any cutter or cap and cut the rolled dough in round shapes. Poke them with fork to make holes so that they don't puff up.

7. Heat oil in a vessel and once its hot, deep fry them to make papdi.

8. Now place all the papdi's in the plate.

9. Pour curd on it throughout. Can put boiled and mashed potato as well.

10. Add tomato ketch up on it.

11. For tamarind chutney - Soak tamarind in 1 cup water to make puree. Make sure its thick puree and not tamarind juice.Add 1 tbsp chat masala to it and boil it.

12. Once its boiled add sugar and mix it well. Boil for 2 more minutes till sugar is dissolved.Let it cool down.

13. Once tamarind chutney is cool add on papdi.

14. Add green chutney if u have. That is optional.

15. Garnish with sev or aloo bhujia and chopped coriander leaves.

16. Serve immediately as papdi will become soft.

Serves: 2

For green chutney:- Take small bunch of coriander leaves into blender. Add 10 mint leaves. Add 2 tbsp curd, 1 tsp cumin seeds, 1 tsp cumin powder and 2 tbsp water. Blend it well. Can add half onion for thicker texture.
