Chicken cutlet
Preparation time: 1 hour
Ingredients:
1. Chicken - 250 gms
2. Onions - 1 finely chopped
3. Coriander leaves - finely chopped
4. Red chilly flakes - 1 tbsp
5. Garlic - 4-5 cloves finely chopped
6. Chicken curry powder - 1 tbsp
7. Salt to taste
8. Boiled and mashed potato - 1
9. Eggs - 2
10. For chicken curry - 1 tsp cumin seeds, chicken - cut into small pieces, tomatoes - 1 medium chopped, turmeric powder - 1/4 tsp, coriander powder - 1 tsp, cumin powder - 1 tsp, red chilly powder - 1 tsp.
11. All purpose flour - 1 cup
12. Bread crumbs - 2 cups
13. Ketchup
Preparation method:
1. Take a bowl, add chopped onions, coriander leaves, red chilly flakes, garlic, chicken curry powder and little salt to it and mix it well. ( If you don't have chicken curry powder, you can any curry powder.)
2. Now add boiled and mashed potato to it .
3. Add 1 egg and mix it well.
4. Add 1 cup bread crumbs to it, mix it well and set aside.
5. Now you can use cooked chicken curry which is left over, Chop them into small pieces and add to the bowl. Chicken should be boneless.
6. If you have fresh chicken meat, preferable breast or thigh meat, then you can cook chicken for cutlet as follows:
Chicken curry for cutlet - (a). Take a pan, add oil to it. Add 1 tsp cumin seeds, add chopped onions and turmeric powder . Let them fry till golden brown.
(b). Add small pieces of chicken meat to it. Add salt and cover it for 10 mins to let it cook on medium flame.
(c). Add chopped tomatoes to it. Let them fry till they are cooked.
(d). Now add red chilly powder, coriander powder, cumin powder and let them fry for 5 mins.
(e). Add little water if required to cook the meat. Cover it and let it cook for 10 more mins.
(f). Once its cooked remove from flame and let it cool down.
7. Now add this chicken to the the bowl of cutlet mixture and mix it well. 8. Apply little oil to the palms and give this mixture shape of cutlet. Do it with whole mixture.
9. Now take 3 bowls, take all purpose flour in 1 bowl, bread crumbs in 1 bowl, beaten egg in 1 bowl.
10. Coat all the prepared cutlets with the all purpose flour 1st and set them in the plate.
11. Now take each cutlet one by one and coat them with egg first and then with bread crumbs.
12. Do it with all cutlets and put cutlets coated with bread crumbs in a plate. 13. You can shallow fry cutlets or put them in the oven as well.
To shallow fry them, take a pan , add 6-7 tbsp of oil to it and fry them for 10 min on slow flame. Turn them and fry them for 10 more mins on a slow flame. To cook them in oven, preheat oven at 160 degree Celsius , Brush little oil to the cutlets on both sides and put it in the oven at grill mode let them cook for 10 mins. turn them and again put it in the oven for 15 mins.
14. Take them on a plate, serve hot with ketch up.
