Mango phirni

Ingredients:
1. Basmati rice - 1 cup
2. Sugar - 1 cup 3. Milk -
3 cups
4. Mango puree - 1 cup
5. Nuts (chopped almonds, cashews, pistachios, raisins) - 1/2 cup
Preparation method:
1. Soak basmati rice in water for 20 mins
2. Drain the water completely and put the rice in the blender in blend it once just for a second. Do not grind it more as it will become paste. It should be coarse.
3. Take a vessel, add milk to it and boil it.
4. Once the milk comes to the boil, add rice to it and let it cook for around 20 mins. Keep stiring as it might burn or start sticking at the bottom.
5. Add sugar to it and mix it well. If the phirni gets thick add milk to it.
6. Once sugar dissolves check for sweetness, but do not add more as mango puree will add little sweetness. Add nuts to it and mix it well.
7. Check if rice is cooked, if not then let it cook for 10 more mins.
8. Once the rice is cooked, turn off the flame. Phirni should not be thick and it should be of flowing consistency.
9. Now add mango puree to it and mix it well. Check for sweetness and mango flavor. Add more if needed.
10. Garnish with mango puree and nuts.
