Baby corn stir fry
Preparation time:
30 minutes
Ingredients:
1. Baby corn - 10 (Slit length wise into half)
2. Maida - 3 tbsp
3. Corn flour - 1 tbsb
4. Salt - a pinch
5. Ginger garlic paste - 1/2 tsp
6. Sesame seeds - 3-4 tbsp
7. Finely chopped garlic - 4 tbsp
8. Red chilly flakes - 1 tbsp
9. Ketchup - 2 tbsp
10. Soy sauce - 3 tbsp
11. For garnishing - chopped spring onions and coriander leaves
Preparation method:
1. To make a batter, in a bowl add maida, cornflour, salt and ginger garlic paste and mix it well.
2. Add little water and make into a flowing bater, not very thick like dough and not very flowy like liquid, just right to coat baby corn.
3. Boil baby corn for 10 minutes. Now add baby corn to it and mix it well. Batter should be completely coated to baby corn.
4. Add sesame seeds to the bowl and mix well again.
5. Take oil in the vessel and once its hot, deep fry the baby corn.
6. Take them out on tissue paper once its golden brown.
7. Now take a different pan to make sauce, add 2 tbsp of oil to it.
8. Once its hot, add finely chopped garlic, saute for a minute.
9. Add red chilly flakes, ketchup, soy sauce, a pinch of sugar, a pinch of salt and saute it well for a minute.
10. Now add fried baby corn to it and toss it well so that sauce is coated with baby corn well.
11. Garnish with chopped spring onions and coriander leaves.
