Vanilla Fruit Cake


Ingredients:

Maida (self raising flour) - 3 small cups

Sugar ( powdered) - 3 cups

Baking powder - 1 tbsp

Eggs - 4

Butter - 1 cup

Vanilla essence - 1 tsp

Double Cream or Whipping cream - 1 can

Preparation method:

1. Sieve maida, powdered sugar and baking powder into a bowl.

2. Separate egg whites and egg yolks into different bowls.

3. Whisk egg white till its all fluffy for about 5 mins if its with blender or 20 mins if whisking with whisker.

4. Whisk egg yolk now and mix it with egg white.

5. Add vanilla essence to it. Add melted butter to it. Mix it well.

6. Now add the wet contents i.e whisked egg to the dry content i.e maida.

7. Blend the mixture with the blender properly so that there should not be any lumps and the mixture should be free flowing.

8. Grease the baking tray with the butter and pour the mixture into the tray. 9. Preheat the over at 180 deg. Celsius for 10 mins and put the baking tray into the oven.

10. It will take 30-40 mins for baking. You can check by inserting a knife into the cake if it comes out dry that means its done.

For icing:- Whisk the cream till its thick. Don't whisk it more, as it might loose the smoothness. Whisk it till its smooth and shiny and stop. Cut the cake into two halves horizontally and let it cool for some time. Sprinkle sugar water on both sides of the cake. Apply the cream to the 1 part and put some pineapple chunks and peach chunks on it. Put the other part of the cake onto it and cover it up with the rest of the cream. Use big size knife to apply cream. For better results can dip the knife into hot water wipe it with tissue and apply. Decorate with fruits and cherries as you like.
