Tamarind rice
Ingredients:
1. Rice - 3 cups
2. Ground nuts - 1/2 cup
3. Chana dal - 1/2 cup
4. Chopped ginger - 2 tbsp
5. Green chilies - 3
6. Red chilies - 5-6
7. Mustard seeds - 1 and half tbsp
8. Cumin seeds - 1 tbsp
9. Urad dal - 1/2 tbsp
10. Curry leaves - 1 hand full
11. Hing powder - 1 tsp
12. Tamarind pulp - 1-2 cups ( depending on sourness you need)
13. Salt to taste
Preparation method:
1. Cook rice in pressure cooker. Add 1 tbsp oil, salt and 1/2 tsp turmeric powder in water while cooking. (This will keep rice grains separate instead of mashing them )
2. In a separate pan, add 7-8 tbsp oil or even more if required. Once its hot, add ground nuts and chana dal.
3. Add green chilies, red chilies and chopped ginger. Let them fry till chana dal gets little brown.
4. Add mustard seeds, cumin seeds, urad dal and let them splutter.
5. Add curry leaves, hing powder and tamarind powder. Don't let them fry for long time as it may burn.
6. Now add tamarind pulp and let it boil for some time and add salt.
7. Turn off flame once its cooked and set it aside for cooling.
8. Once rice is cooked and tamarind pulp is cooled, add this pulp to the rice and mix well.
9. Add fried curry leaves for flavor.
