Coconut Rice


Ingredients:

1. Coconut - 1

2. Rice - 3 small glasses

3. Whole garam masala - 1 bay leaf, 2-3 star annise, 1 inch cinnamon stick, 3-4 cloves

4. Cumin seeds - 1 tsp

5. Green chilies - 4

6. Onion - 1 big - sliced

7. Ginger garlic paste - 1 tsp

8. Coconut milk - 6 small glasses

9. Salt - 1 tsp or as per taste

10. Butter - 2 tbsp

Preparation method:

1. Soak rice in water for 15 mins.

2. Break a coconut, take out small pieces and blend into mixer grinder along with 2-3 glasses of water to get coconut milk. Strain out the coconut milk using a net. Again add water and blend once again and filter it to get 6 glasses of coconut milk.

3. Take a cooker, add butter to it. Once it melts, add whole garam masala to it.

4. Add cumin seeds and let them splutter.

5. Add green chilies and sliced onions. saute them for 2 mins till they are transparent. Don't wait till they get get brown.

6. Add ginger garlic paste and let it fry till its brown.

7. Now add coconut milk and salt. Let it come to the boil.

8. Add soaked rice to it now. Stir it well and cover the cooker with lid. Give it 3 whistles.
