Chicken Biryani
Ingredients:
1. Chicken - 500 gms
2. Whole garam masala - Star annise, bay leaf, cloves
3. Onion - 1 big sliced.
4. Potato - 1 - cut into medium pieces
5. Biryani masala - 4-5 tbsp
6. Green chilies - 4-5
7. Yoghurt - 1/2 cup
8. Basmati rice - 4 small glasses ( Soaked in water for 30 mins)
9. Tomatoes - 2 small sliced.
10. salt to taste
11. Mint leaves - 5-6
12. Coriander leaves
Preparation method:
1. Take a pan, add oil to it. Add whole garam masala to it.
2. Add sliced onions, green chilies and let them fry till golden brown.
3. Add chicken, potatoes, salt and stir fry for 10 mins. Add biryani masala and mix it well.
4. Add yoghurt on low flame and mix it well. Fry for 5 mins.
5. Add 2 glasses of water, cover the lid and let it cook for 20 mins.
6. There should be gravy when chicken is cooked otherwise add more water to get the gravy.
7. Add sliced tomatoes, chopped coriander leaves , mint leaves and cover it. Do not mix or stir , let it cook for 10 mins.
8. In another utensil, boil rice adding 3 tsp salt to it. Add rice to hot water only. Add 1/2 tsp of oil as well.
9. Once rice is half tender and cooked, drain the water thoroughly.
10. Spread the rice on meat, do not stir or mix.
11. Cover it and let it cook on slow flame till rice is cooked.
12. Garnish with fried onions or mint leaves and mix it carefully before serving so that rice grains should not bread.
Method 2 :-
Ingredients :-
For marination :-
1. Chicken leg piece - 2
2. Salt - 2 tsp
3. Red chilly powder - 1 tbsp
4. Garam masala powder - 1 tsp
5. Hyderabadi biryani masala - 1 tbsp
6. Shan chicken biryani powder - 1 tbsp
7. lime juice - 4 tbsp
8. Ginger garlic paste - 2 tbsp
9. Hung curd - 1 cup
10. Green chilies - sliced - 2
for biryani :-
11 . Basmati rice - 2 cups soaked for 30 minutes.
12. Onions - 2 medium size - sliced
13. Shan jeera - 1 tsp
14. Ginger garlic paste - 1 tbsp
15. Garam masala - 1 tsp
16. Biryani powder - 1 tsp
17. Salt - to taste
18. Coriander leaves - a small bunch - chopped
19. Mint leaves - 5
Preparation method :-
1. Take chicken leg pieces in a bowl and add ingredients for marination and mix well. Marinate for 1 hour.
2. Deep fry sliced onions till golden brown.
3. Take a cooker, add 2 tbsp oil to it. Place chicken leg pieces and deep fried onions on top of leg pieces. Close the lid and give it 2 whistles.
4. Put another vessel on gas, add oil to it. Once its hot, add shah jeera and ginger garlic paste to it. Fry it till its golden brown.
5. Add 4 cups water to it. Add soaked basmati rice, salt, Garam masala, biryani powder to it. Do not cover it and let it cook till 70% done.
6. IF there is water left in chicken, let it cook for some more time.
7. Once the rice is done, spread 1 layer of rice on the chicken in the vessel. Spread deep fried onions and chopped coriander on rice. Sprinkle little biryani masala on it.
8. Again spread another layer of rice on it. Spread a layer of deep fried onions and mint leaves on top and close the lid.
9. Let it cook on slow flame for 20 minutes.
10. Turn off the gas and do not open for 5 minutes.
11. Remove the lid after 5 minutes and serve hot with raita.
