Cauliflower parathas
Ingredients:
1. Cauliflower - 1/2 part of big one
2. Cumin seeds - 1/2 tsp
3. Ajwain seeds - 1/2 tsp
4. Cumin power, coriander powder, red chilly powder - 1 tsp
5. Chat masala, red chilly powder - 1 tbsp
6. Salt - 1/2 tsp or as per taste.
7. Coriander leaves and green chilies - optional (can be used in the stuffing)
Preparation method:
1. Grate or grind coarsely the florets of cauliflower. I have used blender here to grind it. Remove the hard stems of cauliflower.
2. Take a pan, add oil to it.
3. Once hot, add cumin seeds and ajwain seeds to it. Let them splutter.
4. Add cauliflower mixture. Add salt, turmeric powder, cumin powder, coriander powder, chat masala, red chilly powder and mix it well.
4. Cover it and let it fry for 10 mins. keep mixing it in between. Don't let it burn, can sprinkle little water to avoid burning.
5. Knead the dough with wheat flour and set it aside.
6. Now turn off the gas . Taste the mixture. If its done, set it aside to cool down completely or cook for 5 more minutes.
7. Once the mixture is completely cool, start making rotis.
8. Put tawa on the flame and let it turn hot completely.
9. Apply little oil while making rotis and fill this mixture of cauliflower in the roundels.
10. Roll it carefully and cook it on the tawa. Apply oil and serve hot with curd or pickle.
