Ridge gourd & egg curry


Ingredients:

1. Ridge gourd - 2 - peeled and chopped.

2. Onions - 1 - chopped

3. Tomato - 2 small - chopped

4. Cumin seeds - 1 tsp

5. Green chilies - 2

6. Eggs - 2

7. Garam masala - 1/4 tsp

8. Turmeric powder - 1/4 tsp

9. Red chilly powder - 1/2 tsp

10. Coriander powder, cumin powder - 1 tsp

11. Salt - to taste

Preparation method:

1. Take a pan, add oil to it. Once the oil is hot, add green chilies and cumin seeds to it.

2. Add chopped onions to it. Let them fry till golden brown.

3. Add chopped ridge gourd and salt to it. Cover it and let it cook for 15 min. Stir in between.

4. Add chopped tomatoes to it. Cover it again and let it cook for 15 mins more.

5. Add garam masala powder,coriander powder, cumin powder, turmeric powder, red chilly powder and mix it well. Let it fry for 5 mins.

6. Now in the same pan, shift the gravy to a corner. Break and drop the eggs one by one into the pan. Make sure not to break the yolk. Let it cook for 3-5 mins, till yolk does not move.

7. Carefully turn the egg to cook the yolk on the other side as well.

8. Now shift the gravy on top of the egg and let it cook for 5-1 0 mins more. 9. Check the salt, if less add little salt to it. Serve hot with rice or roti.
