Chicken tikka masala
Ingredients:
1. Chicken - 500 gms
2. Onions - 1 - Cut into cubes and 1 more for blending
3. Capsicum or bell pepper - 1 - cut into cubes
4. Green chilies - 4
5. Cumin seeds - 1 tsp
6. Ginger and garlic paste - 2 tbsp
7. Yogurt - 1 cup
8. Coriander leaves
9. Coriander powder - 2 tbsp
10. Cumin powder - 2 tbsp
11. Red chilly powder -4 tbsp
12. Turmeric powder - 1/4 tsp
13. Whole garam masala - 4-5 cloves, bay leaf - 1, 1 inch cinnamon stick
14. Cashews - 4-5 (Soaked in water for 30 min)
15. Tomatoes - 2
16. Kasturi methi powder - 1 tsp
17. Lime juice - 2 tbsp
18. Salt
19. Coriander leaves
Preparation method :
1. Cut boneless chicken into medium pieces.
2. Cut onions, capsicum into cubes.
3. To marinate chicken and veggies, take a bowl and add turmeric powder, 2 tbsp red chilly powder, 1 tbsp coriander powder, 1 tbsp cumin powder, 1 tbsp ginger and garlic paste, 1/2 tsp kasturi methi powder, lime juice, yogurt, 1/2 tsp salt and little oil.
3. Add all spices well in yogurt.
4. Take 2 different bowls, add chicken to 1 and add capsicum and onion cubes in 1 bowl.
5. Add 3/4 marination mixture to chicken bowl and the rest to veggies bowl. 6. Keep the chicken and veggies in fridge for 1 hour.
7. Meanwhile blend chopped tomatoes and soaked cashews in blender.
8. After 1 hour, take a pan, add oil to it and add chicken. Let chicken cook until it oozes water.
9. Take chicken in a bowl and cook veggies in the same pan for 10 mins.
10. Now take a pan, add oil to it, add whole garam masala and cumin seeds. 11. Once cumin seeds splutter add green chilies to the pan.
12. Add finely chopped onions and let them fry for 5 mins.
13. Add turmeric powder,ginger and garlic paste. Fry it for 2 mins.
14. Add cumin powder, coriander powder and red chilly powder and let them fry in low flame.
15. Now add blended mixture of tomatoes and cashews. Add salt, cover it and let it cook for 10 mins.
16. Add little water and let it cook for 5 mins.
17. Add cooked chicken and veggies into the gravy now. Let them cook for 5 mins.
18. Add chopped coriander and serve with rice or roti .
