Black-eyed beans curry


Ingredients:

1. Black eyed beans - 2 cups

2. Onions - 3 big - chopped

3. Green chilies - 4

4. Ginger garlic paste - 1 tbsp

5. Tomatoes - 3 medium - chopped or purred

6. Turmeric powder - 1/4 tsp

7. Red chilly powder - 2 tbsp

8. Rajmah or curry masala - 2 tbsp

9. Cumin seeds - 1 tsp

10. Salt - 1 tsp or as per taste

11. Chopped coriander leaves.

Preparation method:

1. Soak black eye beans overnight in water.

2. Take a cooker, add soaked beans and 1 tbsp salt to it. Giver 5-6 whistles to it and boil.

3. Now remove the boiled beans in a bowl and drain little water. Let little water be with beans so that we can use that water for curry.

4. Now in the cooker, add 5 tbsp of oil to it.

5. Add cumin seeds to it. let them splutter,add green chilies and chopped onions. Let them fry till golden brown.

6. Add ginger garlic paste and turmeric powder, fry it till its brown.

7. Add chopped or pureed tomatoes and salt to it. Cover it and let it cook for 10 mins .

8. Now add, red chilly powder, rajmah masala or curry masala which ever you have. Fry it for 10 mins.

9. Add little water which was left with beans.

10. Let it boil and loose all moisture then add the beans. Mix it well.

11. Add chopped coriander leaves to it. Mix it and give it 2 whistles again. 12. Serve hot with roti .
