MANGO CAKE
Ingredients:
1. All purpose flour (maida) - 2 cups
2. Powdered sugar - 3 cups
3. Baking powder - 1 tsp
4. Eggs - 2
5. Vanilla essence - 1 tsp
6. Butter - 1/2 cup
7. Milk - as required
8. Double cream - 300 ml or 2 cups or ready made whipped cream
9. Mango chunks ( preferably canned) (You can use the syrup from the can to sprinkle on the cake)
Preparation method:
To bake a cake :-
1. Take a bowl, sieve maida, baking powder, 2 cups powdered sugar in it.
2. Take 2 separate bowls. Add egg whites in 1 bowl and egg yolks in 1 bowl.
3. With a blender, blend egg whites first to a point where its all fluffy and does not fall from the bowl even when turned upside down. That is known as ribbon form. 4. Now blend egg yolks properly, and add vanilla essence to it. 5. Now mix egg yolk and egg white mixture. Blend once. 6. Now slowly mix dry content, that is maida mixture into the egg mixture. Blend it well. 7. Add mango puree to the mixture now. And blend again. 8. Now check the consistency of the mixture, if its very thick add little milk. The consistency of the mixture should be like little flowing but not too liquid as well. Blend it properly. 9. Now preheat the oven at 180 degree Celsius for 10 mins. Grease the baking tray with butter and pour the mixture into it. 10. Bake the mixture in oven for 30-40 mins. Check with knife if its done or by pricking it. If it comes out dry, its done. If the knife comes out wet or sticky, then let it bake for 5 -10 mins more. 11. Once the cake is done, take it out of the oven and let it cool down for 10-15 mins. 12. Then cut the cake horizontally like cutting with a saw. Keep the 2 pieces separately. 13. Sprinkle mango flavored sugar syrup on both the cake pieces . To apply icing:- 1. Take a bowl, add double cream to it and blend it with a blender for 3 mins till its thick and shiny. Don't blend it for too long. Or you can use ready made icing or whipped cream. 2. Now add 1 cup powdered sugar to whipped cream and mix it well till its dissolved. 3. Apply the whipped cream to bottom part of the cake properly. Don't make the cream layer thick.
4. Now put small chunks of mango all over the part of cake where cream is applied. 5. Again apply the cream on the mango chunks. 6. Now put the other half of the cake on this part of cake where whipped cream is applied. 7. Now apply whipped cream all over the cake roughly. Then smoothen the icing with a large knife. Once a while, dip the knife in hot water and wipe it with tissue and apply on icing to get a smooth surface. 8. Once icing is applied all over the cake, decorate cake with chopped mango and chopped strawberries.Use nozzle no. 30 or star nozzle to decorate side part.
