Kadai Chicken
Ingredients:
1. Cumin seeds - 1 tsp
2. Whole red chilies - 3
3. Chopped onions - 2 big
4. Ginger garlic paste - 1 tbsp
5. Turmeric powder - 1 tsp
6. Chicken - 500 gms
7. For kadai masala :- 3 red chilies, 1 tbsp pepper, 1 tbsp cumin seeds, 2 tbsp of coriander seeds, 1 tsp fennel seeds, 1 tsp kasturi methi
8. Tomatoes (pureed) - 2 small or medium.
9. Fresh cream - 3-4 tbsp
10. Salt to taste.
11. Chopped coriander
12. Kasturi methi - 1tsp
Preparation method:
1. Take a pan and add oil to it. Add cumin seeds and let them splutter.
2. Add whole red chilies and chopped onions and let them fry.
3. Once onions turn golden brown add ginger garlic paste and fry it properly for 5 mins.
4. Add turmeric powder to it and fry it.
5. Add Chicken to it, mix it well and cover it to cook for 20 mins. Keep mixing in between.
6. Meanwhile to prepare kadai masala, take a pan and once its hot add whole red chilies to it. Add whole pepper, coriander seeds, fennel seeds, cumin seeds, kasturi methi and dry roast it.
7. After 20 mins when chicken is half cooked add 1 tbsp of this masala to it. Add 1 tbsp of red chilly powder. Add 1 tbsp of kashmiri red chilly powder for dark color and let it fry for 10 mins.
8. Add tomato puree to it and cover it.
9. Once the tomato gravy is cooked, add cream to it. (Take little chicken gravy and mix it into the cream bowl and then mix this mixture to the curry for best results.)
10. Mix the curry well and add kasturi methi to it, add 1 tsp of kadai masala to it and cover it. Let it cook for 5 more mins.
11. Garnish with chopped coriander leaves.
