Egg & drumstick curry

Ingredients:

1. Chopped onions - 2

2. Cumin seeds - 1 tsp

3. Green chilies - 2-3

4. Ginger and garlic paste - 1 tbsp

5. Chopped tomatoes - 2

6. Red chilly powder - 2 tbsp

7. Turmeric powder - 1/4 tsp

8. Curry leaves - 2 springs

9. Drum stick - cut into pieces - 3

10. Boiled eggs - 4

11. Coriander leaves.

Preparation method:

1. Take a cooker, add oil to it. Once oil is hot, add cumin seeds and let them splutter.

2. Add green chilies, curry leaves and chopped onions. Let them fry till golden brown.

3. Add ginger and garlic paste and fry it till it turns brown.

4. Add chopped tomatoes to it.

5.Cover it and let it cook on slow to medium flame for 10 mins till its mashed. 6. Add red chilly powder, turmeric powder, salt and fry it for a min.

7. Add drumsticks pieces (little pealed as well). Cover and fry it for 10 mins. Add little water to make sure it does not burn or stick to the bottom.

8. In a different non stick pan, add 2 tbsp oil and once its hot add boiled eggs. Keep stiring the eggs as they might stick to bottom.

9. Once the eggs are golden brown, turn off the flame.

10. Now add the eggs in the drumstick pan and mix it.

11. Add 2 cups of water. Add chopped coriander leaves.

12.Check the salt and cover it with the lid. Give it 2-3 whistles.Serve hot with rice.
