RAINBOW CAKE


Ingredients:

For baking :-

1. Butter - around 200 gms (Butter should be at room temperature.) 2. Powdered sugar - 3 big or U.S cups as measurement 3. Self raising flour (Maida) - 3 big or U.S cups as measurement 4. Baking powder - 3 tbsp 5. Vanilla essence - 3 tbsp 6. Eggs - 10 (8 Egg whites - 2 egg yolks) 7. Six concentrated icing colours - 6 rainbow colours - Purple, blue, green, yellow , orange red. Concentrated colors will give bright colors than liquid colors. 8. Two-three sandwich tins for baking. Can use 17-20 cms tins. 9. Milk - 12 tbsp 10. Paper covers for tins or you can grease the tins with butter.

For icing :-1. Double cream - two 600 ml cream bottles 2. One cup powdered sugar 3. Vanilla essence -1 tbsp 4. Concentrated icing colors - 6 - purple, blue, green, yellow, orange, red. 5. Piping bag or piping syringe 6. Star nozzle or nozzle no. 30

Preparation method:

For baking :-

1. Take a bowl, add butter to it. Now add powdered sugar to it. Whisk it with the whisker till sugar is completely dissolved and butter is all smooth. 2. Take another bowl, sieve flour and baking powder in that bowl. 3. In another bowl, separate egg whites and egg yolks. 4. Whisk the egg whites in the bowl till its smooth. 5. Add vanilla essence to egg whites and whisk it again. 6. Add 2 egg yolks to egg white mixture and whisk it well. (We are using only egg whites as it will absorb icing colors to look bright). 7. Now add half of flour mixture to the butter mixture and whisk it well. Then add the egg mixture to the butter mixture and mix it well. 8. Again add the rest of the flour mixture to butter mixture and whisk it well. Then add the rest of the egg mixture and whisk it again. 9. Now the batter is ready taste it for the sweetness. 10. Now take 6 different bowls to mix colors. In each bowl add 2 tbsp of milk. 11. Take a very small amount of icing colors and mix in the each bowl of milk one by one. Starting with purple icing color in 1 bowl, add all other colors to each bowl. Add just 1 drop of icing colors and mix it well. Do not use more icing color at once. If its less then add little by little. 12. Once mixing of icing colors is done in all 6 bowls with milk, add equal amount of cake batter to each bowl. Batter will be thick that's why we will add milk later to the batter after diluting the color in milk. Measure the batter with ladle and add equal amount of batter to each bowl and mix it well to get all rainbow colors. 13. If any color is less , now you can add little more color to the batter. 14. Preheat the oven at 180 degree Celsius for 10 mins. 15. Now take each sandwich tins, either grease them with butter or put paper cover in it and pour in the purple batter in one tin and blue batter in one tin . 16. If you have 2 sandwich tins you will have to bake the batter 6 times. if you have 3 sandwich tins and your oven can accommodate 3 sandwich tins then you can bake 3 layers at a time twice. so bake all 6 colors and check if they are done or by pricking a tooth pic. 17.Once done, take all layers out and let them cool down for an hour and meanwhile you can prepare icing.

For icing :-

1. Take a bowl, add 600 ml bottle cream to it. Add 1 cup powdered sugar and vanilla essence to it and whisk it till sugar is dissolved and icing is smooth and shiny. Check for sweetness , if its less add more sugar and whisk it little more.

2. Now take a cake board put just one spoon of icing in the middle so that the cake should stick to it.

3. Put purple color cake on it. Spread the icing on this purple layer. Then put blue layer and spread icing on it. Do it for all layers till red and cover the entire cake with icing and keep it in the fridge for an hour to set the icing on the cake.

4. Meanwhile we can prepare colored icing. Take 6 small bowls, add 3 tbsp of double cream to each bowl.

5. Add 1 tbsp of powdered sugar to each bowl and 2 drops of vanilla essence to each bowl.

6. Now add one drop of icing color to each bowl. Add purple in bowl, blue in one, green in one, yellow in one, orange in one and red in one bowl. Mix it well, till colors and sugar is dissolved. Check for sweetness, if less add more sugar.

7. Whisk the cream with hand mixer till its smooth and thick. Check for colors . If its not bright add one more drop.

8. Keep all these colored icing in fridge for 30 mins to set.

9. Now take the cake out, apply one more layer of white icing on the cake.

10. Start with purple color, put it in the piping bag with star nozzle.

11. From the bottom of the cake, press the piping bag in the middle and turn it like a circle to make a rose.

12. Do it for all colors one by one as shown in picture till red. Decorate similarly on top of the cake as well.
